Hello, I'm still learning how to navigate through the Blogger website. It's been a while since I've used it. I want to make this place as easy and as functional as possible to you all so please bare with me as I learn to us it. My idea is that I can post all school related packed lunches here along with photos and a small description of what my daughter is eating. Not sure how my plan will work but here we go!

So here we have a Pizza Alternative for those days when your child really wants some pizza. I know my daughter has her days when she's craving a pizza. It also makes it a little easier for her to enjoy what everyone else at school is eating because we do have pizza days at her school as well. I want her to feel comfortable with the thought that she is eating pizza like everyone else. Now, I do want to mention that my daughter can tolerate tomato sauce every once in a while. However, for others it can trigger some symptoms. Please keep this in mind for yourself when giving it to your child or if your an adult and have Fructose Malabsorption. Everyone's tolerance level is different and you may also have to consider serving sizes as well.
^Pizza Alternative^
Schars Gluten free Artisan bread, Hormel pepperoni, Contadina pizza
sauce, some blueberries and strawberries atop some Kite Hill Yogurt(dairy free and plain). The granola is a Sam's Club granola and lastly, Cucumbers with Tajin.
Here we have a simple lunch meal that was super easy for me to prepare because it was leftovers from a birthday party we attended the night before. You can never go wrong with Mexican food when it comes to Fructose Malabsorption. It has saved me many a times when trying to prepare a safe meal for my daughter to eat. Now, the Spanish rice does have some tomato sauce so you may want to see how you or your child can tolerate it but for my daughter she has no problem when eating Spanish rice. I also wanted to mention this type of granola does have molasses as an ingredient but again, check your tolerance level because this one doesn't really do any damage to my daughter and she eats this on the daily.
^Taco Night^
Leftover carne Asada with refried beans and rice. Corn Tortilla and some homemade soy yogurt.
I've added some Natures Path Organic Pumpkin seed and Flax Granola. Fruit choice for the day was some delicious pineapple.
For this recipe I only used Gluten Free soy sauce in place of the light soy sauce, Shaoxing wine and dark soy sauce. The recipe also required some sugar for the sauce but used Dextrose in place of that and just keep adding until its as sweet as you would like it. Once the chicken was done I just laid it over a bed of plain rice that I steam cooked in a rice cooker. Super simple and quick to make and it filled my daughter up really well with no tummy issues. As always I include a fruit, this time I had lots of Pineapple so I used the last bit of that and of course I always make sure she has yogurt daily. I will go into more detail about that later in another blog post. And that's pretty much what she had this week for lunch at school.
^Stir Fry Night^
Black Pepper Chicken, Jasmine Rice, Natures path Organice Pumpkin seed and flax Granola. Pinapple and homemade soy yogurt. Smarties as a safe sweet candy treat!
Here is a favorite lunch that my daughter absolutely loves these days. It's been a repeat request from her lately. It's very simple to make and is delicious and filling. This is an Avocado Bacon Sandwich. My daughter isn't too fond of deli meats so I added bacon as her main protein source. Who doesn't love bacon? I used gluten free bread and added some Nothing But the Bagel seasoning to the avocado to give it some EXTRA flavor (if the bacon wasn't already enough flavor for ya lol) You can obviously mix it up with the sides but for this particular day I used our staple favorites which is always cucumbers and my homemade yogurt. Today we had strawberries as a fruit choice. And there ya have it! a delicious mouth watering lunch 🤤.
^Avocado Bacon Sandwhich^
Schar Gluten free bread, Bacon, Avocado smashed up into the toasted bread, Nothing but the bagel seasoning, English cucumbers with Tajin and lime juice, fresh strawberries and homemade soy yogurt.
